Recipe for Cucumber Canape
A simple and elegant appetizer made with cucumbers, cream cheese, chives, orange peppers, shrimp and dill.
6 ounces cream cheese
3 ounces fresh dill (divided) or chives
2 Tbs milk
2 Tbs fresh lemon juice
¼ tsp garlic salt
1 cucumber (long, skinny English cucumber recommended)
12 shrimp, cooked
¼ red or orange bell pepper
Mix together cream cheese, milk, ½ of the dill or chives minced, lemon juice and ¼ tsp salt in a bowl until fully incorporated.
Put the cream cheese mixture into a piping bag and put to the side.
Slice a cucumber into 1 inch pieces, then using a spoon, hollow out a well in each slice.
Slice the bell pepper into long, thin strips and prepare 12 fronds from the remaining dill.
Pipe cream cheese into all of the cucumber cups evenly, creating an anchor for your other toppings.
Place a shrimp on top of the cream cheese, wedge in the peppers and dill fronds.
