Chicken Chaap Recipe – How To Make Kolkata Style Chicken Chaap – Chicken Recipe – Smita Deo

Ingredients for marination:
6 Chicken Drum Sticks
1 cup – Yogurt
1 tbsp – Red Chili Powder
1/2 tsp – Mace powder
1/2 tsp – Pepper powder
7-8 strands – Soaked saffron
1 tbsp – Ginger paste
1 tbsp – Garlic paste
1 cup – poppy seeds paste (poppy seeds soaked in warm water for 30 minutes, then ground it to a paste)
Salt to taste
1/2 lemon – juice

Ingredients for frying:
1/2 cup – Mustard oil
Marinated chicken

Method of preparation:
Marinate the chicken with yogurt, red chili powder, mace powder, Pepper powder, Soaked saffron, ginger paste, garlic paste, poppy seeds paste and salt. Mix them well and marinate for 4-5 hours.
Before Frying the marinated chicken add lemon juice and mix it well.
On a hot pan add mustard oil, let it smoke.
Then switch off the light, cool it down, and then re-heat it.
Once the oil is hot, add the marinated chicken and fry it till it’s done.
Reduce the flame to medium and cover it and cook it.
Stir the chicken occasionally and cook it till it’s done.
Our Kolkata Style Chicken Chaap is ready to be served.

  2. 1st of all it's not chicken chap at all .. Next point is we never eat chicken chap with luchi.. it's a punishable offence I suppose.. luchi is paired with aloor dum or kosha mangsho..

    You missed out on Saturday (roasted Bengal gram flour), keora water (screwpine water)….also it need to be cooked in white oil with ghee in it….

Chicken chaap good, but u made not fully in kolkata style as I stay i kolkata Im bengali and here chicken chaap is famous in Royal Indian hotel & they add sattu, keora essence & prepare in deshi ghee not in mustard oil & most important we/in hotel prepard with chicken cook not with only drumsticks. Thanx

  13. there is no existance of chaap without keora water rose water and meetha atar…and not poppy seeds at all….we use cashew nut and melon seed paste

    No no no Marination is not supposed to be done in a steel/metal utensil because mostly acids are used in the marinade and also marination is kept for hours so the acid reacts with the metal which is harmful. Therefore always use plastic or glass utensils

    I'm sorry but this is not at all "chicken chaanp"
    No mustard oil. Basically ghee, banaspati and refined oil.
    Secondly base is not only poppy seeds paste, also cashew paste, melon seeds paste along with yogurt and poppy seeds paste. Little bit Sattu if not available then little bit roasted besan(chickpea flour) to bind. Also chaanp pieces are different. Not leg piece. Shahi garam masala will be used where cubeb or kababchini, black cardamom, rose petals, mace, nutmeg are must along with other basic garam masalas like cinnamon, green cardamom and clove. Saffron milk is right. Also khoya/Mawa is used. And mostly it has unique beautiful Shahi smell. Which comes from 3 ingredients. Rose Water, Kewra (screwpine) Water and most importantly two-three drops of "meetha ittar" or "meetha attar" or in Bengali "meetha aator" ( which is available in Kolkata and Lucknow I guess. Yes. It's an edible ittar used in sweets, kebabs, Shahi dishes etc like rose water). these three ingredients must in chicken chaanp and also in Kolkata style biryani for that unique lovely aroma which will not be available from only garam masalas….
