Steve recently visited Sicily and fell in love with this Caponata recipe so we had to try it out for you guys!! It’s a melt in your mouth veggie dish that just radiates colour and makes you feel like you’re on a balcony in sunny Sicily.

  5. Quite right to omit the raisins, a frightful addition. Catalan spinach with pine nuts and raisins gains from the same omission. Down with them, I say, who wants tiny bombs of sickly sweetness exploding in their mouth when they are peacefully chewing their pasta?

  6. Ingredients:

    2 tbsp oil
    2 Red onions chopped finely
    1 Aubergine/Egg plant cubed
    1 Courgette chopped small
    1 red pepper chopped
    1 yellow pepper chopped
    Kalamata olives chopped
    600g cherry tomatoes
    1 tsp salt
    Lid on to stew
    Steam for 10-15 min

    2 tbsp Apple cider vinegar
    50g fresh basil – add half to the mixture
    250g cooked penne pasta
    Vegan cheese parmesan or cheddar
    Handful pine nuts
    Bake 8 minutes

    More vegan cheese and rest of fresh basil to finish!

  10. This looks yum. I'm going to do this recipe exactly the way you guys did it. Cooking with eggplant has always been a challenge for me. My poor basil plant will be ravished again.

  16. I don't know how the Italian fellas feel about this Happy-pear-way capotana. But as a French person, I definitely call this a ratatouille. (It still looks amazing though)
