Today Sara Lynn Cauchon shares 3 chia pudding recipes that are great for breakfast and can be made the night before!

Raspberry Chocolate Chia Pudding
1/2 cup raspberries
3 tablespoons chia seeds
1 tablespoon cocoa powder
1 tablespoon maple syrup
1 cup unsweetened vanilla almond milk

In a medium bowl, using a fork, mash the raspberries. Mix in the chia seeds, cocoa powder, maple syrup and almond milk. Cover and refrigerate the pudding for at least 2 hours before enjoying.

Key Lime Pie Chia Pudding
3 tablespoons chia seeds
1/4 cup vanilla Greek yogurt
1 lime, zest and juice
1 cup unsweetened vanilla almond milk
1 tablespoon maple syrup
Graham crackers for garnish

In a medium bowl, mix together the chia seeds, yogurt, lime zest, lime juice, maple syrup and almond milk. Cover and refrigerate the pudding for at least 2 hours before enjoying.

Pina Colada Chia Pudding
3 tablespoon chia seeds
1 tablespoon coconut sugar
1/2 cup diced pineapple
1 tablespoon shredded coconut
1 cup unsweetened vanilla almond milk
1/4 cup coconut milk

In a medium bowl, mix together all of the ingredients. Cover and refrigerate the pudding for at least 2 hours before enjoying.

  1. Yesssssss I remember. I wanted one especially the cat one but my parents always said no. When Obama was president they came out with one where you grow out his fro. I thought that was funny. Still I didn’t buy it as an adult I thought it was stupid. Maybe my parents had a point.

  6. I’m 43 so of course I remember the 80s Chia Pet commercials! I heard (perhaps your camera man?) say the name Bob Ross in the background. All I have to say to that is: I hope you find a happy spot for your happy little tree to live 😁. I watched Bob paint on PBS thru most of my childhood! 2 great memories & great recipes!
